  1. Put the jalapeños, coriander, dried oregano, juice of the limes, a pinch of salt, and the groundnut oil in a food processor and blitz until smooth. Then stir through the diced shallot and leave to sit for 10 minutes.
  2. Taste and adjust the seasoning as necessary.
