Val’s Venison Haunch Steak with Green Sauce

Venison haunch steaks need very little fuss. Here, they’re seared in a hot pan, basted with butter and rested before slicing. The green sauce has plenty of chopped herbs, capers and mustard, with vinegar or lemon juice for sharpness.

I’ve even cooked this in the woods, swapping cultivated herbs for wild ones. It works just as well on the hob at home. Make the sauce first and let it sit whilst you cook the steaks.
