Karl’s cookery journey has been varied, from a humble pub in the Norfolk Broads to some of the world’s most acclaimed restaurants. Karl is a man impassioned by seasonal British produce, and cooks with deceptive simplicity; with dishes like toad in the hole and tripe on toast being amongst his favourites. Karl found his spiritual home in the pioneering atmosphere of St. JOHN in Farringdon, and later at St. JOHN Bread & Wine in Spitalfields. After an impressive stint in the US, Karl returned home to launch kitchens at the Drapers Arms and Bistro Union, both proudly winning a coveted Bib Gourmand within the first year of opening. In 2016, Karl headed up Shepherds of Westminster, restoring its reputation as one of London’s top places to eat seasonal, British fare. More recently he’s been running the kitchen at Mayfair’s award-winning Kitty Fisher’s restaurant to great acclaim.
