Slow-Roast Shoulder of Hogget with Harissa, Chickpeas & Cauliflower

This one-pot dish requires minimal effort but rewards you with maximum flavour. As it simmers gently, it fills the house with an irresistible aroma that builds anticipation for the meal ahead. A good-quality harissa, whether homemade or shop-bought, brings depth and warmth, complementing the tender hogget perfectly. Whilst cauliflower and chickpeas are more often seen in Indian cooking, they pair beautifully here with North African spices. Though designed for hogget, this recipe works just as well with lamb or mutton shoulder.

Method

Make the Harissa

  1. Toast the spices in a dry pan for a couple of minutes, ensuring they are stirred continuously, then pound in a pestle and mortar or spice grinder.
  2. Next, either continue in the mortar or transfer to a good blender (or use a stick blender in a suitable bowl), add the remaining ingredients, apart from the olive oil, and pound or blend to a fairly smooth purée.
  3. Finally, stir in the olive oil and mix thoroughly. Taste a little, add a touch more vinegar or a pinch of salt as required.

Marinate the Hogget

  1. Remove the lamb from the packaging and pat dry.
  2. Score the fat in a criss-cross pattern, ensuring not to slash too deeply.
  3. Combine the marinade ingredients and rub all over the lamb, working into the score marks.

Whilst it can be cooked immediately, a couple of hours or even overnight would be ideal.

Slow Roast the Hogget

  1. Take a heavy, ideally cast-iron pan, with a lid and sufficiently deep to accommodate the hogget (a roasting tray with a tight-fitting foil lid would be an alternative).
  2. Place the sliced onions in the bottom, the hogget on top, and pour in the stock.
  3. Pop the lid on and place in the oven set at 110°C.
  4. Roast for 6 hours, basting well 3–4 times during the cooking period. A splash of boiling water can be added if required but should not be necessary.
  5. An overnight cook is also possible – in this case, a piece of baking parchment, placed snugly on top of the hogget, will help retain moisture in the absence of basting.

Add the Chickpeas

  1. Add the honey to the cooking juices, then add the chickpeas to the pan, shaking to submerge and distribute them evenly. Return the pan to the oven for a further hour’s cooking.

Prepare the Cauliflower

  1. Place all the ingredients in a roomy bowl.
  2. Toss well to coat the cauliflower with the spices.
  3. Place a good-quality, preferably non-stick pan, over a medium-high heat.
  4. Add the oil and butter, allow to foam, then add the cauliflower.
  5. Allow to cook undisturbed – you are looking to achieve a good, dark brown colour without scorching the spices too heavily. Turn to colour all sides of the cauliflower.

Finish the Dish

  1. Add the cauliflower to the pan 15 minutes before the cooking time is up, to finish cooking in the aromatic lamb juices.
  2. Shake the pan to partially submerge and evenly distribute the florets.

Garnish and Serve

  1. Remove from the oven and stir in most of the fresh coriander, retaining a couple of leaves for some vibrancy at the table.
  2. Allow to rest for 30 minutes, lid on, or make in advance and reheat.
  3. Garnish with a little chopped coriander and serve with a bowl of harissa on the side.

  • Winter and its cold hands have us fully in a tight embrace right now. And so we find ourselves cooking more often than not, to warm our souls.

A ham at the weekend is one such thing that does the job. It can be used for all kinds of dishes and provide your weekdays with a plethora of fine sandwiches. But this fine cut also produces something else. An excellent, warming stock that should not be thrown away.

In fact, it should be used to make something just as special. A deep, hearty split pea and ham soup. And here is @grylos showing you how to do it. Like most things, if you cook with time and consideration, the by-product is often just as good as the main event.

This is why we keep coming back to it. Native, rare breed pork. Dry aged on the bone. Proper depth of flavour. Nothing like the pale, wet stuff you see elsewhere.

These are our Pork Chops with Rosemary and Anchovy Butter. Two thick, rindless chops. Two discs of handmade compound butter. Anchovy, rosemary, lemon zest, a little shallot. Old friends. It works.

Here, @grylos, gets creative with a joint of boned and rolled beef rump, creating three, totally different meals, from the one piece of meat. A great example of some leftfield thinking and the perfect way to add a little variety into your weekly meal planning. Along the spectrum from raw to medium, your week could go a little something like this; tartare and toast lightly rubbed with garlic for lunch on Wednesday; steak night on Friday night, with chips, good red wine and a bowl of bearnaise; a roast dinner on Sunday. Bob’s your uncle, Fanny’s your aunt and a carnivorous and hugely satisfying week of eating is complete.
